Strawberry Cream Popsicles

Ingredients

  • 1 cup cottage cheese

  • 3 tbsp sweetener (suggest allulose)

  • 1 cup strawberries

  • ½ cup sugar-free chocolate 

  • Popsicle sticks


Directions


STEP ONE

  1. In a blender, add the cottage cheese, sweetener, and strawberries. Blend until smooth.

  2. Pour into popsicle molds. 

  3. Freeze until solid.


STEP TWO - Melt Chocolate when Frozen Solid

  1. Fill a small to medium saucepan to ¾ full of water and heat over medium heat. 

  2. Place a glass bowl over the saucepan and add the chocolate. 

  3. Cook and stir until the chocolate is smooth.

  4. Dip the frozen popsicles into the chocolate.

  5. Let harden on wax paper. 

  6. Store in the freezer.


Tips-n-Tricks

  • If you do not have popsicle molds, use ice trays or let the mixture semi-freeze and freeform them on wax paper. 

  • When melting chocolate, the most important thing is not to let it get too hot, as this will ruin the chocolate and prevent it from obtaining the nice smooth texture needed for dipping. 

  • There are other methods for melting chocolate, but this is the easiest and does not require special tools.
