Sausage & Cabbage Stew

Ingredients
1 tsp avocado oil
3/4 lb Italian-style turkey sausage with casing removed
2 small onions, chopped
1 turnip
1 carrot, sliced
1 celery stalk, chopped
4 new red potatoes, chopped
1 cup chicken broth
1 bay leaf
1/2 tsp dried thyme
1/4 tsp dried sage
dash ground pepper
1/2 small head of green cabbage, cut into 4 wedges
1 tsp flour, dissolved in 1 tbsp cold water
1/4 cup minced parsley
2 tsp cider vinegar
Directions
Heat oil in a nonstick saucepan
Add sausage, onions, turnip, carrot, and celery
Cook till the sausage is browned
Stir in the potatoes, broth, bay leaf, thyme, sage, and pepper, and bring to a boil.
Place the cabbage over the stew, then reduce the heat and simmer until the potatoes and cabbage are tender, about 15 minutes.
With a slotted spoon, transfer the cabbage to a serving bowl
Stir dissolved flour into the stew, simmer, stirring frequently, until the liquid thickens slightly.
With a slotted spoon, transfer sausage and vegetables to a serving bowl
Stir parsley and vinegar into the liquid. Pour over cabbage, sausage, and vegetables.

Serves 4
Be prepared and have all items ready and chopped, so that one step doesn't sit too long and get mushy
I like to 1 more cup of broth to our recipe
Rather than cabbage wedges, we chop it, but it is a personal preference
