Sausage & Cabbage Stew

Ingredients

  • 1 tsp avocado oil

  • 3/4 lb Italian-style turkey sausage with casing removed

  • 2 small onions, chopped

  • 1 turnip

  • 1 carrot, sliced

  • 1 celery stalk, chopped

  • 4 new red potatoes, chopped

  • 1 cup chicken broth

  • 1 bay leaf

  • 1/2 tsp dried thyme

  • 1/4 tsp dried sage

  • dash ground pepper

  • 1/2 small head of green cabbage, cut into 4 wedges

  • 1 tsp flour, dissolved in 1 tbsp cold water

  • 1/4 cup minced parsley

  • 2 tsp cider vinegar


Directions


  1. Heat oil in a nonstick saucepan

  2. Add sausage, onions, turnip, carrot, and celery

  3. Cook till the sausage is browned

  4. Stir in the potatoes, broth, bay leaf, thyme, sage, and pepper, and bring to a boil.

  5. Place the cabbage over the stew, then reduce the heat and simmer until the potatoes and cabbage are tender, about 15 minutes.

  6. With a slotted spoon, transfer the cabbage to a serving bowl

  7. Stir dissolved flour into the stew, simmer, stirring frequently, until the liquid thickens slightly.

  8. With a slotted spoon, transfer sausage and vegetables to a serving bowl

  9. Stir parsley and vinegar into the liquid. Pour over cabbage, sausage, and vegetables. 


Tips-n-Tricks

  • Serves 4

  • Be prepared and have all items ready and chopped, so that one step doesn't sit too long and get mushy

  • I like to 1 more cup of broth to our recipe

  • Rather than cabbage wedges, we chop it, but it is a personal preference
