Denver Stuffed Hash Browns

INGREDIENTS

  • 2-1/2 cups Simply Potatoes Shredded Hash Browns

  • 2 tbsp avocado oil (use less to reduce fat)

  • 1 large onion, diced

  • 1 bell pepper, any color, diced

  • 12 oz pre-cooked ham, chopped

  • 2 cups shredded sharp cheddar cheese (use less to reduce fat)


DIRECTIONS

  • Cook hash browns according to directions on bag, adding in chopped onions while frying

  • After hash browns are cooked, push to side of skillet, add ham and cook for 2 minutes

  • Add peppers to side with ham, cook till desired crispness of peppers

  • Serve hash browns topped with ham and peppers and then shredded cheese


NOTES

  • Onions, peppers and ham can be cooked separately and topped as each would like

  • Serve hot so the cheese melts, or throw in microwave for 20 seconds with cheese on top
