Denver Stuffed Hash Browns

INGREDIENTS
2-1/2 cups Simply Potatoes Shredded Hash Browns
2 tbsp avocado oil (use less to reduce fat)
1 large onion, diced
1 bell pepper, any color, diced
12 oz pre-cooked ham, chopped
2 cups shredded sharp cheddar cheese (use less to reduce fat)
DIRECTIONS
Cook hash browns according to directions on bag, adding in chopped onions while frying
After hash browns are cooked, push to side of skillet, add ham and cook for 2 minutes
Add peppers to side with ham, cook till desired crispness of peppers
Serve hash browns topped with ham and peppers and then shredded cheese
NOTES
Onions, peppers and ham can be cooked separately and topped as each would like
Serve hot so the cheese melts, or throw in microwave for 20 seconds with cheese on top
