Cinnamon Sweet Potato Cubes

Ingredients

  • 1 medium sweet potato

  • ½ tsp cinnamon

  • ¼ tsp salt

  • ¼ tsp black pepper

  • Cooking spray


Directions

  1. Peel and dice the sweet potato.

  2. Coat a skillet, preferably non-stick, with olive oil and warm over medium heat. 

  3. Add diced sweet potatoes and cook for 12-15 minutes, stirring occasionally. 

  4. When cooked through, sprinkle with cinnamon, salt, and pepper to taste. Toss and serve.


Tips-n-Tricks

  • A splash of water and a lid can help soften the potatoes faster if they are taking a while.

  • For a fancy side dish, add chopped pecans and a drizzle of honey.

  • If you prefer a more savory dish, swap the cinnamon for smoked paprika or cumin.

  • This is a great side dish to meal prep for the week!
