Cinnamon Sweet Potato Cubes

Ingredients
1 medium sweet potato
½ tsp cinnamon
¼ tsp salt
¼ tsp black pepper
Cooking spray
Directions
Peel and dice the sweet potato.
Coat a skillet, preferably non-stick, with olive oil and warm over medium heat.
Add diced sweet potatoes and cook for 12-15 minutes, stirring occasionally.
When cooked through, sprinkle with cinnamon, salt, and pepper to taste. Toss and serve.
Tips-n-Tricks
A splash of water and a lid can help soften the potatoes faster if they are taking a while.
For a fancy side dish, add chopped pecans and a drizzle of honey.
If you prefer a more savory dish, swap the cinnamon for smoked paprika or cumin.
