Chocolate Coconut Smoothie

Ingredients
1-½ cups unsweetened coconut milk
¼ cup unsweetened cocoa powder
¼ cup coconut cream
¼ cup sugar-free chocolate chips
2 tbsp erythritol (or keto-friendly sweetener of choice
1 tsp pure vanilla extract
½ tsp coconut extract (optional)
1 cup ice cubes
Whipped coconut cream and unsweetened shredded coconut for garnish (optional)
Directions
Combine coconut milk and chocolate chips in a small saucepan, melting them over low heat. Let it cool briefly, but don't let it harden.
While it is cooling, add cocoa powder, coconut cream, erythritol, vanilla, coconut extract, and ice into a blender.
Poor cooled chocolate and coconut mixture over the items in the blender.
Blend until smooth.
Add sweetener to desired taste.
Poor into a glass, garnish with whipped coconut cream and shredded coconut if you like.
Tips-n-Tricks
Serve in a chilled glass.
Vanilla extract, coconut extract, chocolate chips, and erythritol are typically gluten-free, but check the labels if you are sensitive or have celiac disease.
